Aji (Colombian salsa)

I love fresh salsa and pico de gallo. Thanks to Ana for this tangy, Colombian twist! I haven't tried it yet, but chopped mango would be really good in there too.

Ingredients
  • 2 large tomatoes
  • 1/2 medium onion
  • 2 green onions
  • 2 handfuls of cilantro
  • 1/4 cup of vinegar
  • 3/4 cup of water
  • 1 teaspoon lime juice
  • salt to taste
  • dried chilis or chipotle peppers, to taste  
Directions
  1. Dice the tomatoes 
  2. Finely chop the onions and cilantro
  3. Add the rest of the ingredients and let sit in the refrigerator for at least an hour before serving.
