Tangy Baked Tempeh Charmoula

This recipe from Quick Meal Help is delicious, super fast and easy. I haven't modified it at all.

If you aren't familiar with Charmoula, it's a flavourful marinade that is used in Algerian, Moroccan and Tunisian cooking. Sometimes, I make one block of tempeh (this recipe calls for two) and use the other half of the marinade with veggies.

Ingredients

  • 2 tablespoons fresh lemon juice
  • 4 tablespoons rice vinegar
  • 1/2 cup of water
  • 4 cloves of garlic, minced
  • 2 teaspoons cumin (not my fave but integral flavour in this dish)
  • 2 teaspoons paprika
  • 1/4 teaspoons cayenne pepper
  • 2 1/2 teaspoons salt
  • 1/2 cup olive oil
  • 2 packages of tempeh, cut into slices (serves 8).

Instructions

    1. Preheat oven to 350ยบ.
    2. Whisk all ingredients (except the tempeh) in a small bowl.
    3. Place tempeh on a baking sheet and cover with the marinade.
    4. Cover the baking sheet with tin foil.
    5. Bake for 20 minutes. Remove tin foil and bake uncovered for 10     more minutes or until tempeh is as browned to taste.
