If you aren't familiar with Charmoula, it's a flavourful marinade that is used in Algerian, Moroccan and Tunisian cooking. Sometimes, I make one block of tempeh (this recipe calls for two) and use the other half of the marinade with veggies.
Ingredients
- 2 tablespoons fresh lemon juice
- 4 tablespoons rice vinegar
- 1/2 cup of water
- 4 cloves of garlic, minced
- 2 teaspoons cumin (not my fave but integral flavour in this dish)
- 2 teaspoons paprika
- 1/4 teaspoons cayenne pepper
- 2 1/2 teaspoons salt
- 1/2 cup olive oil
- 2 packages of tempeh, cut into slices (serves 8).
